Dear Guests, from 24th of March our restaurant will remain closed until further notice.
This dry red wine was made in our village of Kisishevy, in Georgia, from the endemic vine stock SAPERAVI. In August, we cut off some grapes from the vines in order to limit the harvest to seven tonnes per hectare so as to increase the quality of the remaining grapes and improve the taste of the future wine. At the end of September, we picked the ripe grapes and manually selected them in our vinery. During the whole fermentation process, which takes place in Qvevri in our winery, we regularly mix the grapes with the help of special wooden batons. Qvevri are traditional large Georgian earthenware vessels, the shape of amphora without handles, which have been used for the past 8,000 years. Once the long maceration is completed, we pour the wine into new Qvevri. This 2020 wine aged for ten months in Qvevri bringing complex flavours, a deep aroma of sun-dried forest fruits and a note of dates. A “Teinturier” grape, Saperavi gives our wine its lovely deep colour and big, but well integrated, tannins follow. We only made 4,100 bottles of this wine which goes well with hard cheeses, roasted red meat and poultry.
“We are happy to dedicate this unique wine to those who appreciate traditional craft wines made with love and passion.” – Davit Turkestanishvili
Red dry wine from the endemic SAPERAVI variety cultivated in the vineyards of the native village of Kisiskhevi. Ruby-coloured wine with an aroma of red berries enriched by a distinctive note of cherry and blackberry in the aftertaste. Well-structured with balanced tannins and acidity and appealing subtle finish. Year 2021 was characterized by a long hot summer. This resulted in limited harvests with a yield of only 4.5 tonnes per hectare. The ripeness of selected fruit gave a beautiful roundness and nobleness to that wine. The cultivation of our grapevines and the whole process of vinification was conducted in-house with attention devoted to maintaining organic conditions. No chemical substances were used. Eventually the wine, as tradition has it, matured in our cellar for 12 months in clay qvewri.
“It is with great pleasure that i dedicate our wine to all those who appreciate the very best that Nature has to offer us” — Davit Turkestanishvili
The pride of Kakheti – SAPERAVI from the village of Shakriani yielded a modest but exceptional grape harvest in 2022. The resulting wine developed an amazing bouquet of forest fruits, ripe cherry and earthy aromas with a hint of cigar. Aging for a year in clay qvevri perfectly balanced the level of tannins and strength. The dense structure and deep, unique color will enrich every dinner. It tastes best in a good company of friends.

Distillate from the leftovers of wine fermentation. An ancient drink that Georgians have been making from grape must for centuries. Strong, with a characteristic aftertaste of grapes, raisins and dried fruits, with notes of peaches and smoke. It pleasantly evaporates on the palate and warms you up. It goes very well with khinkali and meat dishes. It is used in Georgia as an antiseptic and to aid digestion following fatty meals. May the force of our chacha be with you!
